ResourcesBreak Away "Sugar Glass"

Old fashioned sugar or "stunt" glass, the kind once used in movies to create the illusion of breaking glass, can be made in any kitchen. The recipe is the same as for hard candy.

Here's how it's done:Resources 2

What you need:

heavy cooking pot with lid
pie pans
candy thermometer (optional)

Ingredients:

1 cup of water
2 cups of sugar
¾ cup light corn syrup
cooking oil
food coloring (optional)
flavor extracts (optional)

What to do:

First, bring the water to a boil, then add the sugar and syrup and return to boil. Cover the pot for two minutes, then remove the lid and continue boiling with no stirring to 310 degrees (This should take about 10-15 minutes of hard boiling). When making candy 310 degrees is called "hard crack." You can test for it by dropping one drop of the mixture into a glass of ice-cold water. If the sugar makes long threads that crack, your mixture has reached "hard crack."

Once the mixture has reached 310 degrees, remove it from the heat immediately. If overcooked the glass becomes discolored. Use a paper towel to Resourceslightly oil your pie pans and then pour in a thin layer of the hot mixture. The thinner you pour, the more realistic your sugar glass will be. If you want to add flavoring, do so just before you pour the mixture into the pans. Let the pans cool for 90 minutes, then gently slide the sugar glass out of the pans. What you've produced is both a break away plate and a giant, edible lollipop.
